Apple Cake Recipe

At a recent family gathering I made an apple cake from scratch. I received so many compliments and requests for the recipe that it just seems to be the perfect one to share with you here on the blog. Plus what better way to celebrate the beginning of autumn when fresh juicy apples are so plentiful right now!

Trust me this cake looks much better in person. Photo was taken using my phone.

Apple Cake

4 cups peeled and diced tart apples

2 cups sugar, mix with apples 1/2 cup oil

2 eggs well beaten

Mix above ingredients together in large mixing bowl. Then mix the following dry ingredients in a separate bowl:

2 cups flour

2 teaspoons soda

2 teaspoons cinnamon

1/2 teaspoon salt

1 cup chopped walnuts

Lightly stir all ingredients together. Pour batter into a 9X12X2" cake pan. Don't grease the pan. Bake at 350 degrees for about 1 hour or until the cake shrinks from the sides of the pan.
